Dinner 3

For the third dinner in the "Kyoto Dinner Experiments" we were invited home to John and Sasha, on the menu was the Norwegian Komla and Japanese half frozen Salmon.

Komla/ Blandaball

1 kg Fish This could be Cod, Pollock or Haddock

1 litre of potatoes cut in small pieces

2 Table spoons of salt

3 Table spoons of potato flour

1 Table spoon of flour

1 dl milk

Bacon

First you grind the fish with the salt, then you add the potato and grind again. Add the milk and flour to make the dough so that it is easy to make the balls. Role the dough into balls were you put one bacon in the middle.

The “komla” is to be added in boiling water with salt and boiled for 1 hour.

Served with fried bacon.

Sasha

Dish name: Guji no Sakamushi Tilefish Steamed in Sake

Ingredients:

Amadai Tilefish (Guji in Kyoto local dialect) – 2

Shiitake mushrooms -5

Enoki mushrooms -1 pack

Shironegi leek -1

Ichibangiri Konbu kelp -5 cm strip

Sake -75cc

Water -75cc

Recipe:

1. Cut the stems from the mushrooms and cut the shironegi diagonally into 1cm pieces.

2. Set the konbu in the bottom of a deep dish, and place the fish and other ingredients on top of it.

3. Pour in the water and sake mix.

4. Cook in a steamer for ten to fifteen minutes.

5. Eat with ponzu (Japanese citrus yuzu/shoyu soya sauce/dashi mixture)

John

Dish name: Ruibe Iced raw salmon, an Ainu dish.

Unsalted Sake Salmon

‘Kakucho’ shoyu soy sauce, from Yuasa-cho in Wakayama Prefecture (whereshoyu soy sauce originated)

Sansho Shoyu, from Taka-gun in Hyogo Prefecture

Hon-wasabi, Japanese horseradish (from Shizuoka prefecture)

Ezo Yamawasabi from Hokkaido

Benitade red water-pepper

Kikka edible chrysanthemum flowers.

Recipe:

1. Slice the frozen salmon into slices just as you would sashimi.

2. Blend the two shoyu mixes together.

3. Grate the two types of wasabi.

4. Dip the frozen salmon into the wasabi and shoyu mix of your choice.

5. The benitade and chrysanthemums are used as garnish.

Dinner 2

For the second dinner in the "Kyoto Dinner Experiments" we invited Ayaka and Saki to our house.

Here is the recipe for the Scandinavian Dish.


Fried Salmon with Leak Sauce

Salmon Fillet (200-250 g per person)

Sugar

Salt

Butter (for frying)

Dill

Leak Sauce

1 Leak

3-4 table spoons of butter

2 1/2 dl Cream

2 1/2 dl Milk

1 table spoon flour

2 tea spoons mustard

Salt and Pepper


Marinate the salmon with salt and dill. Put in the refrigerator for one hour before frying.

Melt butter in a sauce-pot, cut the leak in small pieces and fry it in the butter. Then add the cream and the flour. Add the milk and let it boil lightly for 10 minutes. Then spice it with the mustard, pepper and salt.

Serve with cooked potatoes, carrots and broccoli.

For the first dinner in the "Kyoto Dinner Experiments" we were invited home to Tani and her husband. They served us an amazing 6 course dinner, presenting all the different ways the Japanese prepare fish.

Fried Herring and Potatoes





The fried herring and potatoes.
This used to be a very common Swedish fish dish in the traditional Swedish kitchen.
Today it is rarely cooked by the young generations but the old ones keep it alive.
This dish will be cooked and served in the "Kyoto Dinner Experiments".

Ingredients:

1 kg Fresh Herring
2-3 tea spoons with salt
1 dl Flour
Butter
2 Onions
2 1/2 dl Cream

Serve with Potatoes

Bread the fillets of herring using the flour. Fry the herring in butter.
Then fry the onion, put the herring on top of the onion. Pour the cream into the frying pan on top of the herring and the onions. Let it boil for a couple of minutes.

Meat, tomato and some spaghetti, Italian the Bettina and Simon´style


This dish is more Italian than Scandinavian and Japanese, but is really easy and good so we just had to add it..

Ingredients:

1 package of meet
200 g spaghetti
2 Tomatoes
1/2 Green Paprika
1 package of crushed tomatoes
1 Leek Plant
Salt
Pepper
Rape Seed Oil

First you put on water for the spaghetti, add some oil and salt, when it boils you add the spaghetti. Cut the Paprika and Tomatoes in to small pieces, then fry the meet in the the oil and add the crushed tomatoes, the leek plant and the paprika. Let it boil for a couple of minutes before you spice it up with some salt and pepper.
